Chopper idea, need help

Ok I have found the style chopper i wish to build.
But a few things i need help with.
Mostly the motor. Any idea what the best metric v-twin would be for a similar look? Also do you need to use a radiator with them?
The frame will be very similar to this one but a hardtail instead. Also not as much rake.

Motor size around 800 would suit me. But can they be used without the radiator? How do you keep them cool?

not all metric V-twins are water cooled, look at an early XV motor, all air cooled

Water cooled engine won't run without water cooling.

May I humbly suggest you have a look at Yam XVS650 motor? It's a bit beefier than the earlier XV motors. Looks good, air cooled, or what about motor from VN800 Classic Kwaka?

the 650 is liquid cooled but still looks cool.
Not to bad...Except it has a shitty engine profile. Its more like an L than a V...
